    The favorite of Northern England, Brown Ales were the standard drink of most people due to the contamination risks inherent to drinking water at the time. Inability to evenly control the heat of the kilns led to a darker grain color. The maltster's efforts resulted in a darker beer with a warm, nutty flavor. It was said that more grain in England was used for making beer than bread. Old Stitch, named after a common slang term for the devil, is well-balanced, mild and toasty with a fine, foamy head. Evil never tasted so good.

    Originating in Northern Germany, Brunswick Mum came to England during the reign of the house of Hanover. The German version was a medicinal beverage with many different herbs and spices, but in its journey to England lost most, but not all, of the additives becoming a light, spicy ale. One 18th-century brewer describes being able to read a newspaper though a glass of mum. Dear Old Mum is brewed with barley, wheat and oats and lightly spiced with coriander and grains of Paradise. With a hazy, light orange hue it is crisp, light, delicious, and the perfect Summertime ale.

    The West coast sea town of Bristol was a major shipping partner with the colonies due to a location more expedient for departure than London. The brewers developed a trade in beer specifically made for export to America. Recipes demanded stronger alcohol content and increased hops in order to survive the long journey and remain palatable when it arrived. Soon the colonists grew to like this clear light brown, hoppy, potent brew. Wetherburn's Tavern Bristol Ale is a hearty beer and a great choice for bold flavor, full of hops and malt alcohol.

    Porter was the most popular beer of the early and mid parts of the 18th century. Originally known as "entire butt beer," it was soon dubbed Porter due to its popularity amongst area dockworkers. Porter was one of the first beers produced by large industrial breweries and became popular not only in America but as far away as the court of Russia. Toby's Triple Threads Porter is richly flavored with a mixture of burnt sugar, molasses and licorice root. Don't shy away from the dark tint; aging for long periods results in a mild and smooth finish.
